Thai-Style Couscous (4 – 6 Servings)

1 can Hansen’s Mandarin Lime Soda
1 14-1/2 oz. can diced tomatoes, undrained
1/2 tsp. red pepper flakes
1/2 tsp. dried mint flakes (or 3 or 4 fresh mint leaves chopped)
1 large garlic clove, crushed
10 oz. quick cooking couscous
1 Tbs. toasted sesame oil
1 Tbs. lime juice
1 Tbs. soy sauce
1 green onions, minced
1/2 cup cilantro, snipped
 
1. Combine soda, diced tomatoes, red pepper flakes, mint and garlic in a large saucepan. Bring to a boil, remove from heat and stir in couscous. Cover and let stand 10 minutes.
2. In a small bowl, combine sesame oil, lime juice, soy sauce, green onions and cilantro, set aside.     
3. Uncover couscous, fluff with a fork, and stir in contents of the sauce mixture.
