Recipe of the month – Lemon Couscous Chicken

Ingredients

  • 1-1/4 cup water
  • 1 Tbs. olive oil
  • 2 cups chopped broccoli (or dehydrated broccoli)
  • 1 package Near East Roasted Garlic & Olive Oil Couscous
  • 1-1/2 cup canned chicken or dehydrated equivalent
  • 1/4 tsp. lemon peel

Cooking Steps

  1. In camp Cover broccoli in water and soak for 10 minutes to rehydrate (if dehydrated broccoli are used).
  2. In large cook pot, bring water, oil, and contents of the spice envelope from the couscous mix to a boil. Drain broccoli (if using rehydrated broccoli are used).
  3. Add broccoli, couscous, chicken, and lemon peel to skillet. Remove from heat.
  4. Cover and let stand for 5 minutes.
  5. Fluff with a fork.

Serves 2
